Mac & Cheese



Macaroni & cheese is one of my favorite foods!  But unfortunately, it's usually high in points!  But not this one!!!  I found this recipe from Hungry Girl.  She has a lot of great recipes for us who follow the Weight Watchers plan.

I made this for lunch and with my tomato and mandarin orange it was only 5 points plus!!!

Cinnamon-Vanilla French Toast Nuggets



This morning I made these yummy french toast nuggets.  I got the recipe from Hungry Girl!  She has a lot of great recipes that work great for all of us on Weight Watchers.  This recipe is easy and delicious!

Only 4 points plus!

Ingredients

2 hot dog buns
1/3 cup fat-free liquid egg substitute
1 teaspoon Coffee-mate sugar free French Vanilla powdered creamer
2 dashes cinnamon

Optional topping:
sugar-free pancake syrup

Directions:

Split buns in half and cut halves into fourths, leaving you with 16 chunks of bread.

In a small bowl, dissolve powdered creamer in 1 tablespoon warm water.  Add egg substitute and 1 dash cinnamon, stirring until mixed well.

Bring a large pan sprayed with nonstick spray to medium high heat.  Dip bread pieces in egg mixture, covering them completely.  Place them in the pan and cook for 3-5 minutes, flipping occasionally to cook all sides.

Remove from heat and plate your nuggets.  Sprinkle with another dash of cinnamon.  If you like, top with sugar free pancake syrup.

Makes 2 servings.;

Bacon-Cheddar Egg Mug


This quick and easy 4PP breakfast!

Ingredients:
1 Slice bacon
3/4 Cup fat free egg substitute
3 Tablespoons shredded reduced fat cheddar cheese
Optional Topping: Ketchup


Directions:
Microwave bacon on a microwave safe plate for 1 1/2 min. until crisp.

In a large microwave-safe mug sprayed with nonstick spray, microwave egg substitute for 1 1/2 min.

Chop or crumble bacon and stir into egg.  Microwave for 45-50 seconds, until mostly set.  Mix in cheese.  Microwave for 20 seconds or until set.

Stir and enjoy!

Makes 1 serving!

Sinful Delicious Strawberry Filled Chocolate


If you're in need of something sweet, this would be great to have.
I like these for an after dinner dessert!  
YUMMY!


You will need:
10 strawberries
1/2 cup of semi sweet chocolate chips
Egg carton
sandwich bag
bowl of water

First grab a microwave safe bowl and fill it with water.
Place in the microwave for 5 minutes or until HOT!

While the water is getting hot, place the chocolate chips in a sandwich bag and secure the top.




Then place the baggy in the hot bowl, and in about 5 minutes 
your chips will be melted.






While your waiting for your chocolate to melt,
cut the tops off the strawberries.


Then cut a small hole in the sandwich bag, which will be used
to squeeze the chocolate out of the bag and into the strawberries.


Who-la!




There is a points value of course, but well worth it!
1 Points Plus for each strawberry.

Fresh Strawberry Crepes


Here is a yummy strawberry crepe that would be great for breakfast, and for only 3 points plus!
Serves 8

Ingredients:
5 large egg white(s)
 1/8 tsp table salt
 1 tsp vanilla extract
 1 1/2 Tbsp unsalted butter,
 melted 1 cup(s) fat free skim milk
1 cup(s) all purpose flour
 8 spray(s) cooking spray
 1 pound(s) strawberries, hulled and sliced very thin (about 3 cups)
 1/4 cup(s) powdered sugar

In a medium bowl, whisk together egg whites, salt, vanilla extract, melted butter, milk and flour until just combined. Coat an 8- or 9-inch skillet with cooking spray; set over medium heat. When pan is hot, add 1/4 cup of batter and tilt skillet to cover entire bottom of pan with a thin layer of batter. Cook for 2 minutes; flip over. Top with about 1/3 cup strawberries; cook for 2 minutes more. Fold crepe over and slide onto a serving plate; cover to keep warm. Repeat with remaining ingredients; sprinkle with sugar.
Yields 1 crepe per serving.

Easy 2 Points Plus Egg Omelet



Fill up your plate with a delicious filling breakfast but only use 2 points plus!

Easy Egg Omelet
6 tablespoons egg substitute (1pp)
1oz Fat Free Cheddar Cheese (1pp)

Cook up the egg substitute and flip.  Add what ever veggies you'd like.
I had mushroom, green peppers, onions & tomatoes.  
Top with cheese then flip half over to cover.  
Cook until the cheese melts

Serve with fruit.
